Italian cuisine, in all of its extraordinary regional variations, continues to enjoy outstanding international popularity.
The mission of the Università del Gusto is to offer high quality instruction and training, to meet the ever-increasing demand for education in the various food, wine and catering sectors.
The Università del Gusto facilities are located in Creazzo just outside of Vicenza (70 kilometres from Venice and 50 from Verona) and include a newly constructed 2000 square meter training centre. All parts of the training centre, from the classrooms to the training kitchens, are equipped with the most modern audio-visual technology available. Through the use of the facility equipment, nstructors of high professional standing are capable of meeting requests from foreign students interested in learning the techniques that make Italian cuisine great.
The Università del Gusto publishes a comprehensive catalogue of Courses in Italian Culinary Arts for Foreigners. The courses are designed with the following objectives in mind:
• to convey knowledge about Italian cuisine, both traditional and contemporary;
• to offer training in the specialized techniques used in Italian cuisine;
• to enable students to attain new, useful culinary skills in a relatively brief period of study;
• to propose a range of specifically focused courses, in the areas of catering, confectionery arts, ice cream making, pizza and bread baking, and wine stewarding,
• to provide qualified instruction so students learn how to skillfully create dishes atthe highest level of Italian culinary tradition;
• to offer intensive custom-made courses which enable the students to focus on special skills applicable to markets in their homeland.
The courses are intended for :
• Professionals already working in the restaurant industry who wish to specialise in Italian cuisine and learn about regional variations as well as contemporary interpretations.
• Graduates from professional cooking schools with a major in catering, interested in having a practical experience in Italy and learning more about Italian cuisine, its variations, and the best products to use.
• Associations of international senior and junior chefs.
The students may choose from 3 programes of study:
• an intensive one-week course lasting 40 hours, dedicated to traditional Italian cuisine;
• a two-week course, lasting 80 hours which, in addition to traditional Italian cuisine, also provides an in-depth cultural study of contemporary Italian cuisine.
• a three-week course, lasting 120 hours, which enables the participants to study traditional as well as modern Italian cuisine and specialize in certain areas of study.

The Università del Gusto offers students administrative support services, and in particular, can assist with the location and booking of housing accommodations near the Centro Formazione Esac.
NOT ONLY CUISINE, BUT CULTURE AND TOURISM, TOO
Vicenza is a city included in the UNESCO Heritage list, renowned for its Palladian villas and its Renaissance palaces.
To help the participants gain a better understanding of the basics of Italian cuisine, the Università del Gusto offers cultural tours and activities. The tours are intended to expose the students to the cultural and environmental roots of Italian culinary tradition.
The Università del Gusto, upon request, also organises:
• gourmet food and wine tours through the various provinces of the Veneto region;
• guided cultural tours to artistic and natural sites and attractions in the Veneto region;
• shopping in the city of Vicenza and the province.
The Veneto Region also offers visitors plenty of choices for golf. The courses are located in delightful places all over the territory and easily accessed by car from Vicenza.
